I am a graduate student, living in Richmond, Virginia. I am a horseback rider, runner, and paddle boarder. Days that include all three are the best. I am a vegetarian and love experimenting with healthy and delicious recipes!

Something to remember.

protein bar variation

I tried the protein bar using whole salted almonds, unsweetened coconut, and without peanut butter.  They came out great.

Vanilla apricot almond protein bars



1/4 c peanut butter, 3/4 c sugar free maple syrup, 1 c each of 3 cereals of choice (I avoid refined sugar so used special k, fiber 1 and Cheerios) 1 c oats, chopped almonds, chopped dried apricots, 1 scp vanilla whey protein powder

Combine 3 c cereal and 1 c oats in large ziplock and crush till lightly ground. Microwave p butter 30 sec. Combine crushed cereals in bowl and add in peanut butter and maple syrup mix together. Mix remaining ingredients. If it seems like it isn’t holding together add more syrup. Spread out on lightly greased baking pan. I cooked mine close to 20 minutes at 375. Less time for soft bars and longer for crunchy.
